Yeah, I know about Kubuntu I recently migrated from 6.06 to PC-BSD. Adept is alright I suppose, but it's nowhere in the league of .PBIs as far as ease of use and speed go. Just as easy as on Windows of OS X. If you like KDE you should try PC-BSD out sometime, for me KDE starts out almost 30 percent faster than under Kubuntu and I've noticed a substantial increase in speed.
It does seem to use a bit more RAM, however.

Well, maybe for the speed, but I'm having trouble figuring out how it could possibly be easier than typing in the name of a package, selecting it, and clicking 'Apply Changes'.

Well yeah, Kubuntu is known to be quite slow. I've got a nice, powerful PC though, and I'm actually planning on getting a Core 2 of some sort next year, so speed isn't much of a concern to me.

For a server I would personally recomend OpenBSD or FreeBSD depending on whether you are paranoia or performance oriented.
PC-BSD is in my opinion the "ubuntu" of BSD ie the BSD for windows users/mac users/grandmothers. Desktop oriented so to say.
