Default PSX iso FMV edit

I have seen some ISO FMV edited to other FMV with website labeled. Question is how did they edit FMV to junk FMV? (to help reduce ISO size)

Do I need coding knowledge?

In most cases, you at least need hex editor knowledge.

In many PSX games I've seen, the entire disc image is chock full of checksums and filesize tables. If you change one thing, the checksum/size ends up differently, and the game won't boot.

These guys probably knew which other values to modify, in addition to editing and recompressing the .str ...so yeah, it's not usually a point and click endeavor.
