I think that the point is not to show off skill (speed), but about planning the fastest possible way to beat the game, while moving in the most efficient way possible. This is especially true in the Metroid Fusion, Zero Mission, and Super speed runs (Tool Assisted), where they need to plan out the best way to get 100% completion.
As for the viewer, they like to see a game's physics exploited in every possible way because it just looks cool, and makes you want to try things (not tool assisted).
