plz see the img

I was trying to simply translate the intermission menu of super robot taisen J, but im a noob only having recently started learning how to hack a rom, and still learning.

According to that picture I was looking in the rom memory while it was running and i came across that thing with all the letters then while looking in the Hex editor i came across a similar thing, but all jumbled and broken up, can I make a table using this data? Am i on the right track? or should i simply give up?
