Levelling up in Final Fantasy 5 and 6 does nothing to your stats. In 6, the only way to increase stats is to level up with a stat boosting esper equipped, and setting up espers is time consuming and tedious, and you don;t get them for a while, making level ups worthless until then. In 5, I believe that stats are only gained when levelling up with a certain job, though you don\t take long to get jobs.

This is, in my eyes, a problem.

Has anyone ever written hacks for these games to change this? I realize that "traditional" RPG stat building isn't programmed into the games, but it should be possible to add it with some creative hacking.

FF6 might be done this way by perhaps using "hidden" espers or something.

Actually, HP and MP, but having 9999 HP doesn't mean much if you have level 1 stats the whole game

please. in FF6, level has a role in both the magic damage and physical damage you do, and it's even more important than Vigor for the latter.
