Well actually the green eggs would be just old hard boiled eggs you've had in the fridge for awhile but haven't spoiled yet. Obviously when he wrote the book he was refering to the fact egg yokes turn green after awhile, rather than typical yellow they start out as, and not eggs with green shells or eggs with green whites.
