Winamp for audio, because of the many various plug-ins (psf, nsf, usf, etc.), and Media Player Classic along with RealPlayer Alternative and Quicktime Alternative for video.

(Sorry to be the one to break the table)
Media Player Classic for video, Winamp for audio. I've dabbled with Foobar, but there just didn't seem to be anything significant to gain out of switching over fully, so 5 years of use, and Winamp's still my player of choice.
That screenshot, though, has everything maximised. It's never like that for more than 30 seconds at a time - once I've picked my album, it's just the minimised player and playlist in the bottom corner, at a princely 274*28px.
Haha, like anyone cares. As I said, it's been a slow day.

Xbox: Xbox Media Center - combined with SMB/Windows File Sharing, it's the ONLY way to watch fansubbed anime and sentai like MagiRanger.
Windows: Video: Windows Media Classic; MP3: WInAmp 5; Store: Sony Connect.
Linux: I'm new to this, but I've just started using Ubuntu 5.04, and it includes what I believe is a Xine-based player, called Totem Movie Player 1.0.1 - I'm using the Xine-backend, with the FFMPEG plug-in; and the MPLAYER codecs for DivX, Xvid, QT, Real, and WMV support. It works pretty well... I've been able to play my MP3s and WAVs. :)
foobar2000 for audio and VLC for video.

Windows: Winamp for Audio, VLC for Video (VLC is the only one that plays .ogm 100% correctly...)
Linux: BMP for Audio, VLC for Video (VLC just rules, what can i say, and since it's cross-platform, may as well keep it...)

Winamp (an older version) for mp3's
Zoom Player for video. It pretty much rocks.
I kept Windows Media Player for the occasional quicktime or real player file.

*nix: Mplayer for video, xmms for mp3, vlc for dvd.
xp: vlc for video, winamp for mp3, foobar for spc, psf, etc...
Winamp for all things audio (tried several times to become interested in foobar2000 but to no avail). I mostly use it for video, too, but when I'm visiting someone with my binder full of DVD-Rs and I don't want to screw around with codecs for an hour I'll just install VLC.

After seeing so many people choose that one, I decided to give it a try. I think I might make this my default over VideoLAN. Thanks everyone for bringing this little gem to my attention.

Winamp and Windows Media Player have found themselves out of a job.
Edit: Made a nice shot of foobar2000 (http://home.graffiti.net/lillymon:graffiti.net/images/foobar2000_20050708.png) for you (this could double for "What are you listening to right now?", I assume the forum approves of my choice of music), but Zoom Player is uncooperative when it comes to screenshots. I'll def. get Real Alt., but there's not point in the one for Quicktime, because I have to have Quicktime installed for iTunes to work

Ever considered Quicktime Alternative or Real Alternative?
I prefer Quicktime Alternative for Quicktime files because of the better video scaling you get with Windows Media Player.

I already use Real Alternative, even though it doesn't support most RM files I've run across for some reason.
I just reinstalled XP and am trying out Quicktime Alternative, so far I haven't had the need to use any QT files, though. Quicktime did its purpose well, I just can't stand it taking over some file associations sometimes.

yeah, does it run in linux?
also, does it give .ogm proper treatment?
if the answer to either question is no, i'll stick to VLC.

Hah, yeah, IMHO anything is better than WMP. I use Winamp for a lot of stuff....great plug-ins for all the music I want to listen to, including AC3. Does a good job of video as well. Plus G-Force just rules...I know WMP has that also but I don't like how WMP does visualizations.

Yeah, that annoyed the hell out of me.
I think Quicktime Alternative keeps enough fo the QT core where you can still use the Quicktime browser plugins.

You could also use the FoxyTunes extension for Firefox. It supports a ton of different players.
