I have Windows Server 2003 Ent. Edition installed right now, but I'm thinking of giving Gentoo Stage 3 a test drive. But just in case I can't adapt to Linux, I wanna be able to delete the partition.

So I wanna know how can I dual boot Gentoo Linux and Windows on 1 HD? The HD is only 30GB but Im upgrading to 500GB soon.

just follow the gentoo documentation and man pages...

that is step one in adapting to linux, learning how to read

Oh man, I used all the space on my HD for Windows Server 2003. Is there someway I can r-partition without deleting my current partition?

Partition Magic should be able to take care of that for you. I think the newer versions allow for NTFS, but Server 2003 uses NTFS5 doesn't it? Not sure if that is supported or not. You might be able to get a trial version of it somewhere.

Mandrake has an NTFS partition resizer built into it's graphical installer. You could run the installer, change the partition size and either continue with the Mandrake install, or install another OS on the newly freed area of the disk.
